    working partners.

    400 seats and 2 floors,

    Competed in the “Rocky Mountain Oyster Shucking Competition”.

    Overseeing the hiring, staffing, and scheduling of all kitchen employees
    during restaurant hours and for outside events.

    Old Strathcona Market- Featured Celebrity Chef

    Filming videos featuring farmers, growers, and the overall growth of Chefs with
    the market working together

    Cooked and interviewed almost all vendors and growers for film
    NAIT- opening of 4 food outlets

    Helped open new food outlets in a new wing of NAIT United Nations-Travel to showcase Indigenous Canadian Cuisine such as Cairo, Egypt 2022.

    River Cree Resort and Casino. 
    Responsible for running many restaurant outlets, and managed dozen staff throughout the Resort.
    Had my own flagship restaurant, SC Restaurant
    Did events, TV shows, all wedding and concert nights
    Showcased massive amounts of awards, competitions, and Indigenous community leadership

  • 2005-2008

    Executive Chef De Cuisine 
    L1/L2, Fantasyland Hotel, Edmonton AB

    Overall management of the fine dining restaurant with food and service;
    molecular, from progressive cuisine to high-end tapas and lounge fare

    All Triple Five business dinners and functions, Kosher and non-kosher,
    banquets, buffets, and all outside functions.

    Cooking classes, workshops, and cooking demos including featured chef for stage cooking for any event in WEM, as well as all VIP private functions.

  • 1998-2004

    Executive Chef 
    Dante’s Bistro and Sky Lounge, Edmonton AB

    Overall running of the restaurant from expediting, cooking, and supervising all of the kitchen staff.

    Ordering and maintaining costs.

    Scheduling all administrative paperwork.

    Communicate effectively with all of the Management Team to ensure a team atmosphere is created.
